- Wash beetroot and put in a polybag.microwave for 4 minutes.peel and grate.
- Beat curd till smooth.add all other ingredients.add just enough beet to get a pretty pink colour.the colour darkens or keeping.check taste.keep aside in the serving bowl.
- For the baghar,heat 2tbsp oil.remove from heat.add 1tsp moong dhuli dal.let it turn golden.add seame seeds.return to heat.
- Add jeera and sarson.splutter for 1 minutes.remove from heat.add red chillies and curry leaves.stir for a few seconds.pour on the prepared dahi.
- Deep fry curry leaves in some oil and top raita with these.
