- 1 big + 1 medium onion

- 1/2 cup green peas
- 2-3 green chilli
- as per taste Salt
- 1/2 - 1 tsp red chilli powder
- 1/4 tsp turmeric
- 2.5 tsp pav bhaji masala
- 1 tbsp ginger garlic paste
- 3-4 butter
- 1 tsp cumin seeds
- Handful coriander
Steps to make to make Pav Bhaji
- Finely chop all vegetables, par boil green peas.
- Assemble all ingredients
- Boil potatoes, mash it and keep aside.
- In moderately heated pan, add butter, add cumin seeds and allow to crackle, then add chopped onion and sauté till translucent.
- Now add ginger garlic paste and sauté till rawness goes off. Then add all veggies except tomato, cabbage and green peas.
Sauté for 4-5 minutes by adding salt. - Now add chopped capsicum + cabbage and sauté for 2-3 minutes.
- Now add tomatoes + green peas, mix well and sauté for 2-3 minutes.
- Now add all spices and mix well, stir fry for 4-5 minutes till spices release oil. During this stage, mash veggies as much as possible. I prefer chunky, so mashed lightly.
- Now add mashed potato and mix well.
- Now add warm water as per requirement (preferred gravy consistency) and cook / simmer for 3-4 minutes.
- Now add chopped coriander
- Lastly add lemon juice + butter, mix well and bhaji is ready.
- Toast pav in sufficient butter by add pav bhaji masala, toast nicely and serve with bhaji along with finely chopped onion and lemon pieces.
