Steps to cook stuffed chicken, rice and potatoes.

  1. Mix tomatoes, garlic, salt and about 1/2 cup water.
  2. Heat the oil in a deep skillet and fry over high heat until light brown.
  3. When the rice turns golden, add the tomato puree. Grind the chicken stock in this mixture. When it starts to boil, stir well, reduce heat and cover.
  4. Cook the rice for about 15 minutes until most of the liquid is absorbed. Check the consistency of the rice, if it is too crunchy, add another cup of water and cook again.
  5. While the rice is cooking, wash and cut the potatoes
  6. Cook the chicken if necessary. (I always pull the chicken, I use it in everything). Cook with 2 cloves of garlic and half an onion for great flavor. Cut into pieces while still hot, mash with a fork.
  7. Add chicken to potatoes and place in a deep casserole dish. Add 1/3 cup vegetable oil and mix everything.
  8. Cook for about 50 minutes, stirring 2 or 3 times.
  9. While it's cooking, chop and fry your scallions and slice your bacon. (Jalapenos are there because I love them. They're optional.)
  10. Once the potatoes and chicken are cooked through, add the rice and sprinkle with the grated cheese and bacon. Cook for another five minutes.
  11. Add other toppings of your choice (scallions, sour cream, etc.) and enjoy.
