Instructions to make to make Beetroot Pulao

  1. Grind the last four ingredients to a paste and keep aside. Do not add water.
  2. In a large pan add 2 tbsp of oil and the rice. Saute till it turns opaque. Move this to the pressure cooker.
  3. In the same pan, add 2 tbsp oil and add cloves,cinnamon sticks,star anise,cardamom pods and green chilli. Saute it for 3-4 minutes.
  4. Now add the paste (Step 1) to the above and saute well till the raw smell is gone.
  5. Add the chopped shallots, saute for few minutes. Then add chopped tomatoes to it.
  6. Once they are half way cooked, add the grated beetroots and mix all well.
  7. Allow it to cook for 6-8 minutes. Add chilli powder, garam masala and salt to the above.
  8. Now add the masala to the rice. Add 3 cups of water and allow it to cook for 20 minutes or 2 whistles.
  9. Beetroot Pulao is ready to be served.
