Cooking instructions for fajitas with mashed potatoes and chicken
- If the chicken breasts, green and red peppers, and onions are not chopped (chopped), individually chop and toss.
- After tossing the chicken breasts with the veggies, add 3 tablespoons McCormick Fajita Seasoning, then toss to combine.
- In a frying pan, preferably Mongolian, add 2 tablespoons of vegetable oil (so that meat and vegetables do not burn) and put in the oven on low heat.
- After a minute, gently add the fajitas to the pan and stir until the meat and veggies are distributed.
- Cover the pan with a lid and cook for 2-3 minutes.
- After 2-3 minutes carefully turn the fajitas and let them cook on the other side. After that, the chicken should be cut in half.
- Turn the fajitas over, cover the pan again with a lid and cook for another 2-3 minutes.
- After 3 minutes the fajitas should be fully cooked (note: the chicken should be lightly browned and tender, the vegetables should be slightly dark and tender).
- Cover the fajitas with a lid and set the oven to a very low temperature to keep the fajitas warm.
- If it's not about multitasking, start with mashed potatoes.
- Place a pot of hot water on the stove and turn it to low.
- Once the water is boiling, add 1/2 stick of butter to the water.
- When butter has melted, add 2 cans Idaho mashed potatoes and stir until potatoes are melted.
- If the potatoes are too thick, add 3 cups of water.
- Add 4 cups milk (preferably 2% or low-fat) and continue beating.
- Add some onion powder.
- Add some garlic salt.
- Add some ground black pepper.
- Add 2 pinches of salt.
- Mash the mashed potatoes until thick and creamy.
- When ready to serve, place the mashed potatoes in the center of a plate, then place the chicken fajitas on top of the potatoes and enjoy! :)
